L’Arpege is the restaurant of French culinary superstar Alain Passard. Back in 2001, he caused something of a stir in gastronomic circles, when he denounced the over reliance of red meat in French cuisine – a statement close to sacrilege for some. He’s stuck to his guns though, establishing organic kitchen gardens outside of the city, and creating a menu at L’Arpege, that while not wholly vegetarian in any sense, featuring game, poultry, seafood, gives vegetables a prominence rarely seen in French cuisine. As a result, this is one of the most unique restaurants in Paris, a haven for veggies and foodies alike. His commitment to the environment extends beyond the restaurant and all the waste matter from l'Arpege is transported back to Passard's gardens to be composted. Prices are undoubtedly high, but the skill in the kitchen is exemplary, the quality and freshness of the ingredients superb, and you won’t find another restaurant quite like it in the whole of France.
