Rapidly gaining a reputation, not just as one of the best restaurants in Copenhagen, but one of the best restaurants in Europe, Noma stands out as being a high-end Scandinavian restaurant that actually glories in the potential of Scandinavian food – we’re talking wild salmon, seaweed, pickled herrings and other unexpected delicacies.
Located in a huge warehouse, in the colourful Christianhavn area, the interior is all exposed brick, raw floorboards and flickering candles. A warm atmosphere prevails. Chef Rene Redzepi has done time in both the French Laundry in California and the legendary El Bulli in Spain, so it’s no surprise the place has already won a Michelin star and is tipped for two.
To really experience what the kitchen is capable of, the seven-course tasting menu is definitely worth opting for. Dishes have been known to include Salt cod brandade with a truffle broth, pickled Icelandic skate with elderberries, vinegar jelly cubes or beef tartare with a tarragon emulsion and wood sorrel. Unlike French or Italian cuisine, most people don’t have a very developed idea of what Danish cooking is like. Potentially amazing if this place is any evidence.
